Southern Potato Salad


This is a recipe that we love (sorry the picture is so dark). As most of you know, our daughter plays softball. School softball, then she plays travel softball in the Summer. I made a vow last year to do our best not to eat a lot of fast food during these weekend tournaments. This is a great recipe to have in the cooler on those warm Summer days.

4 potatoes
4 eggs
1/2 stalk celery, chopped
1/4 cup sweet relish
1 clove garlic, minced
2 tablespoons prepared mustard
1/2 cup mayonnaise
salt and pepper to taste

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop

Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.

In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix.

Outback Steakhouse Ranch Dressing


Outback is our all time favorite restaurant. Granted, we only get to go on special occasions such as birthday's & anniversaries, but we love, love, love it. I have had this recipe for years. It's a copy cat recipe for their ranch dressing. I hope you enjoy it as much as my family does.


Outback Steakhouse Ranch Dressing
3/4 cup mayonnaise
1/4 cup buttermilk
1/2 tsp. garlic powder
1/4 tsp. cayenne pepper
1/4 tsp. freshly cracked black pepper (I use regular)
1 dash dried minced garlic

Mix well and refrigerate.
