This is a recipe that we love (sorry the picture is so dark). As most of you know, our daughter plays softball. School softball, then she plays travel softball in the Summer. I made a vow last year to do our best not to eat a lot of fast food during these weekend tournaments. This is a great recipe to have in the cooler on those warm Summer days.
4 potatoes 4 eggs 1/2 stalk celery, chopped 1/4 cup sweet relish 1 clove garlic, minced 2 tablespoons prepared mustard 1/2 cup mayonnaise salt and pepper to taste
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.
In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix.
Hi - I'm Linda and welcome to my new blog. I am a Christian wife and mom. I've been married to my high school sweetheart for 25 years, and we have two children. A son, who is 20, and a daughter 15. I am so blessed to be able to stay at home, and work at home. I hope you enjoy this blog as I make this new journey. I truly have a Full Cup with too many blessings to count.
